
I still haven't cooked anything awful, burned down the kitchen, or ruined any cookware. I made some really yummy parmesan crusted chicken cutlets with parmesan smashed potatoes. I got the recipe for the cutlets in Real Simple Meals Made Easy cookbook which were fabulous and winged it on the potatoes. Tonight I made a pretty tasty creamy cajun chicken pasta. Here is the recipe. I altered it by using double the pasta, leaving out the mushrooms, I used fresh garlic instead of garlic powder, spiced up the cajun seasoning with some cayenne pepper, and cut the heavy cream with some 2% milk.
