
Today I was thawing a package of pureed butternut squash and decided instead of using it for Charlotte's lunch that I would make muffins. I used this awesome
recipe for pumpkin muffins from one of my favorite cooking blogs
smitten kitchen. I wasn't sure how they would turn out by using butternut squash instead of pumpkin but I'm really happy with how yummy they are. I also found that I didn't have pumpkin pie spice but googled it and found a great substitute
recipe.
